Why do filmed concerts look differently from other types of video? For example, the super bowl halftime show had a different look than the rest of the broadcast.
Ultimately, video cameras record light that hits the image sensor.
Football players need light so they can see well enough to play. Dancers are lit so they are the most beautiful, outrageous, stunning, colorful, whatever. Using two entirely different lighting designs (one for function, the other for effect) is going to result in very different light hitting the sensor, and thus very different looks.
It could also be that the concert crew are using different camera platforms than the NFL Films crew. But I would venture to say that the biggest difference starts with the lighting.
