How can you insert text or graphic between two objects in a shot

To explain better here's this example... All the directions in this video (freeze, microwave, etc...) is text between two objects. Illuminate me :) how is that done?

That's done with rotoscoping.
Copy the footage layer.
Mask around the object that shall be above the text and do this frame by frame.
Insert the text below the masked layer.
Done.

Software might be After Effects but you can do this with the most NLEs and other effect software.

Just clone the footage from the 1st layer onto a 3rd layer
and put the text onto the 2nd layer (between the footage).
The 1st layer is your basic footage.
The 2nd layer is your text that sticks on top.
The 3rd layer (your footage) again covers all beneath.

Now create an animated mask in the 3rd layer in order to let shine through everything beneath (layer 2 and 1).

It's only the two titles at 0:42-0:45 that have the mask/roto. All the others are simply timed well to the movement. So you can achieve 90% of the look with practically no work.
