Have you thought about the a6000, a6300 and the G80(G85 in europe)?
The AF depends, most of the times I believe you'll be using MF for filmmaking. At least I do use mostly MF as it gives me more control since sometimes the AF makes mistakes.
I would go for festivals. Not all take months and months to come back to. If you think it could do well just send it. Check filmfreeway.com and submit. Nothing to loose mate. :)

Well I don't know about specific terms for a shot like that. But you can think about them and search. For example, cork flying of a champagne bootle and the foam comming out. Squeesing a toothpaste tube... Anything that has a flying liquid should do the trick. You'll have to just imagine stuff and search for it.
