When shooting a Black and White film...?

Should you shoot it in color and then desaturate it in post or use the monotone function and do it all in camera?

I think it is better to record in color.

You could potentially take advantage of the 3 luminosity channels to construct your best black and white mix.

today shooting in b/w mean you cannot find enought knowledge about manage makeup, dressing, scenografy etc for b/w shooting. Old rules of shooting with colored filter work only for film, for digital are different beast.
My best suggest is to shoot in color, be cause you can postprocess with more control, be cause most of software can select different shade of gray for yellow, green, blu, red, and more, to allow you to build better depth on picture.
BUT ... not think to do all in post, use a monitor with saturation to 0 and manage contrast and light like b/w.
