Resources needed to start creating video essays / 'fan-editing'

Having enjoyed video essays from channels like 'Every frame a painting' and people like Kevin B. Lee, I would love to start this practice myself. How do these editors obtain the footage in good quality, with audio at that, and then go on to take it apart? Are they ripping DVD's, moving files into Final Cut Pro, and then separating audio and visual etc.? Are there more legal ways, or alternatives to retain better image and sound quality? If there are any tutorials out there, or other programs / resources, I'd really appreciate some directions.
