Great selection, Ryan! Haven't heard of Carbon Copy Cloner, but it sounds like exactly what I need to streamline my backups. As for some others you may be interested in:

It's not in the "utility" category, but Blender 3-D is an unbelievably full-featured, open-source (i.e. free) modeling/animation program. http://www.blender.org/

For website coding, I use exclusively Taco HTML. It's not free anymore, but it does offer a 30-day free trial. It's a pure text editor (so no WYSISWYG, which personally I prefer), but it checks your syntax, color-codes your tags and automatically tabs your code. Infinitely faster and easier to use than the very similar Amaya HTML editor. http://tacosw.com/

Thanks very much Raafi -- very helpful! The real reason I posted this, of course, was to find out about good apps I don't know about, and now here are three. Anyone else?

When I'm writing treatments, I often download images from the web -- huge batches of images -- to help see the idea a little better. I generally like to watch them in slideshow format in order to click through and figure out which ones to discard or keep. Apple's Preview is ok at this, but it's a little slow and in slideshow mode it always wants to show those annoying controls every time you move the mouse. Phoenix Slides is light, fast, and has way more options for slideshows (including subfolder scanning). And for posting those or my own images to a blog Resize! is another great app for just that purpose.

If you're developing multiple sites, then MAMP can start to feel cramped after awhile, so it's good to be able to set up virtualhosts on your mac. VirtualhostX allows you to easily set up virtualhosts without having to log in to the terminal. The free version lets you set up three virtualhosts.
